Hi reworth,
About which type of visa you should take, wherever your financial support from you only need study permit in Taiwan. And you should provide document of where and how much money to support your life. The whole process takes only three days. Don't worry about that.
After arriving Germany, you should bring the study proof which signed by your boss with your three month visa to Buergeramt forregistration(Anmeldung)

The address(Am Markt 1) from Deutsche Institute in Taipei is wrong. Please notice that.
After registration, you should tell the officer where your money comes. If it's from salary, they will give you a long term visa with working permit in universitaet Tuebingen. Otherwise, you have no permission to work in Germany. It takes about one or two weeks depending on your document. And then you can take your long term visa to apply to your contract from university or hospital. It takes two weeks for degree certificate to university, and one week for personal document to hospital. You can go to open an bank account when you get long term visa. Once getting contract, you can apply to health insurance.
If you finish these, congradulations! You are officially a member in your lab.
